They require commercial processors of such food to comply with production standards laid down by these Regulations and to carry out controls prescribed by these Regulations. All processors shall retain the services of a person knowledgeable in food preservation technology. The standards of production concern principally the hygienic handling and the preservation methods of the low-canned acid food.
