Abstract

This Directive lays down public health and animal health rules applicable to the killing of wild game and to the preparation and placing on the market of wild game meat. This Directive shall not apply to small numbers of wild game, unskinned or unplucked, and, in the case of small wild game, ineviscerated, supplied directly by the hunter to the consumer or to the retailer; small quantities of wild game meat supplied directly to the final consumer; the cutting and storage of wild game meat in retail shops or in premises adjacent to sales points, where the cutting and storage are performed solely for the purpose of supplying the consumer directly on the spot. Member States shall ensure that meat declared unfit for human consumption can be clearly distinguished from meat declared fit for human consumption. Each Member State shall draw up a list of approved wild game processing houses, each having a veterinary approval number. Processing houses must be approved and establishments must fulfill the hygiene requirements. Wrapping and packaging of wild game meat must fulfill all rules of hygiene. Health marking must be carried out under the responsibility of the official veterinarian.
