Abstract

This Directive lays down health rules for the production and placing on the market of fresh meat intended for human consumption from domestic animals of the following species: bovine animals (including the species Bubalus bubalis and Bison bison), swine, sheep and goats, and domestic solipeds. This Directive shall not apply to the cutting and storage of fresh meat performed in retail shops or in premises adjacent to sale points, where the cutting and storage are performed solely for the purpose of supplying the consumer directly on the spot. Carcasses and half carcasses must come from a slaughterhouse meeting the conditions laid down in this Directive, approved and supervised in accordance with article 10. The slaughter animal must have been inspected ante mortem by an official veterinarian and passed fit, as a result of such inspection, for slaughter and have been treated under satisfactory hygiene conditions.
