Abstract

The Codex consists of 2 Chapters each divided into 5 Parts: Coffee and Coffee Substitutes. Chapter 1 deals with the description and quality standards of raw coffee, roasted coffee, decaffeinated coffee, coffee extract and coffee drinks, as well as the denomination of the afore-mentioned substances. Part 3 of this Chapter deals with the assessment of the quality of coffee and issues such as adulteration, spoilt coffee, incorrect denomination, damage to health. Regulations for the marketing of coffee are contained in Part 4. Finally, Part 5 deals with the various methods to ascertain the amount of caffeine. Chapter 2 is devoted to coffee substitutes. Chapter II of the Codex deals with sugar and various kinds of sugar.
