Its purpose is to define basic procedures of good manufacturing practices for salt-processing establishments, with an emphasis on the control of critical points. It applies to establishments that carry out salt production/industrialization activities for human consumption, encompassing the stages of the post-extraction/primary production process, such as washing and stockpiling, milling and/or refining, adding additives, packaging, storage and transportation. It is also intended for the agents of the National Sanitary Surveillance System, at federal, state and municipal levels, in the exercise of inspection of these establishments, as well as to guide companies in the elaboration and implementation of the Manual of Good Manufacturing Practices with the necessary information for the safety and suitability of salt for human consumption.
