Abstract This Resolution approves the Technical Regulation on the Microbiological Sanitary Standards for Food. The Regulation establishes the criteria for Conclusion and Interpretation of the Results of Microbiological Analysis of Foods for Human Consumption specified in Annex II. This Regulation excludes food products and toxins of microbial origin, such as mycotoxins, for which there are standards defined in specific legislation. It also excludes food raw materials and semi-finished products, intended for industrial processing in the form in which they are or are not intended for human consumption. The criteria for establishing a microbiological standard can be considered in isolation or together as follows: Characterization of micro-organisms and toxins considered to be of health concern. Classification of food according to epidemiological risk. Methods of analysis for the determination of micro-organisms. Sample Plan for determining the number and unit size of samples to be analyzed.
