Abstract

These Regulations lay down the requirements for the construction and operation of abattoirs supplying the domestic market. Part I contains general provisions. Regulation 4 formulates a responsibility of the occupier of an abattoir to ensure compliance with these Regulations, and the duty to take reasonable precaution to prevent the contamination of meat in the abattoir and comply with reasonable directions of authorised officer for the purposes of these Regulations. Part II defines requirements for construction of abattoirs and the facilities and equipment therein. The supply of clean potable water shall satisfy the requirements of the European Communities (Quality of Water Intended for Human Consumption) Regulations, 1988 (S.I. No. 81 of 1988). Part III lists requirements for the operation and management of abattoirs such as slaughtering times, reception of animals, formalities to be dealt with before slaughter, ante- and post-,mortem examination, cleansing of carcasses, processing of meat, wrapping of meat, etc. (97 regulations completed by 1 Schedule)
